Sushi [ 1/3 ]


What is Sushi ?

When most people hear the word, “Sushi”, they immediately think of raw fish. In truth, dishes made with raw fish are called “Sashimi”. What defines Sushi is any dish made with vinegar rice, which may or may not include raw fish. Most often, Sushi will consist of various types of shellfish such as crab or lobster, or cooked fish along with other fresh ingredients wrapped tightly inside the sticky vinegar rice.

The origin of sushi is not Japan. It is said that sushi was introduced into Japan in the 7th century from China. As a way of preserving fish, the Chinese people started making Sushi but without modern day refrigerators, they used the natural process of fermentation. To complete the Sushi-making process, only rice and salt were needed. The result was delicious fish, causing Sushi to grow in popularity.
In the 1800s, Sushi was made using a process that involved pressing fish in between layers of salt and leaving it for months to ferment. This process is known as narezushi, or “edomaezushi”, which is still used in some restaurants in Japan. The name narezushi was originally called “Edomae” and shortened to Edo. This name translates to “in front of Edo” which is a reference to fish caught in front of Edo city and used for the making of Sushi. Unlike the Sushi eaten today, Edo was formed in a ball of rice with a slice of the fish. When it came time to eat narezushi, the rice ball was thrown out and only the fish eaten. Today, narezushi is very difficult to find outside of Japan in that it has a unique taste not usually appreciated by Westerners.
As time passed and many of the Japanese and Chinese cultures crossed, Sushi became a popular food choice in both countries. Throughout the cities, you would find food stands where various types of Sushi were sold. Since Sushi was easy and quick to make, it became a staple for most households in the 19th Century to accommodate the busy lifestyles of the Japanese people.
Eventually, a food shortage in Japan changed the way in which Sushi was made. Rather than throw the rice out, it was now eaten along with the fish. Additionally, the fermentation process was shortened so the fish although still safe to eat, was a little on the raw side. Because the fermentation process was shortened, the Sushi had a slightly sour taste, which people loved. As people began experimenting, they discovered that by making the rice with a little vinegar the same sour taste was produced and better yet, the fermentation time was dramatically reduced to one or two days.

Basic sushi ingridients:

SHARI – cooked and seasoned rice
SU – rice vinegar
SHŌYU – soy sauce
WASABI – green horseradish
GARI – pickled ginger
NORI – species of algae
KAMPYŌ – dried gourd strips
TAKUAN – pickled Daikon radish.
TAMAGO – omelet
UMEBOSHI – salted, pickled Japanese plums
GOMA – sesame
MIRIN – sweet rice wine
ABURAGE – fried tofu
GOBO – burdock root
NATTO – fermented soybean

  2. 1. I've eaten sushi only twice in my life so I'm not a connoisseur, but after reading and watching your presentation I got hungry ;-) Everything depends on kind of sushi - I hate raw fish, but other types which I tried were nice.
    2. No. I suppose it may be rather complicated unless you have a sushi robot ;-)
    3. I haven't tried many sorts of it so I can't answer now.
    4. Soya sauce is ok, I use it in my kitchen although I don't make sushi. In my opinion ketchup just doesn't fit.

    Yes. Maybe three or four times. The overall effect was poor, but I am not giving up. :)

    Nigiri especially with eel and teriyaki souse or honey.

    Traditional. Ketchup and mustard? It looks like desecration. ;)

    I've mixed feelings. Making sushi is kind of an art, so using such means seems to be "improper".
    On the other sushi is just food ... .
    I cannot make up my mind about this.

  4. 1. I’ve tried sushi few times. It’s good but not my favorite dish.
    2. Nope. I’ve only tried to prepare the rice.
    3. In my opinion all of them have the same taste.
    4. Never tried American style…
    5. Nowadays it’s hard to do everything by human’s hands. But preparing some dishes is a kind of an art, something for the eye something for the taste.

  5. Sushi isn't bad when you eat it once in a while ;) I never tried making it but my friends did and it wasn't bad. I think I like Maki most. Using ketchup is totally unacceptable, Wasabi all the way!
    Robots are here to help us, so why not :)

    3. I don't know.. generally i'm making maki and california i didn't tried other kinds of sushi except nigiri which i'm not a fan ;P.
    4. Only traditional! I didn't tried yet american 'style' and i don't want to because to use ketchup or mustard is like to eat sausage with chocolate yahhh :PP
    5. This way or that way - hmm i don't think that this change the taste maybe only the thought that sushi you're just eating is from mass production can bring disgust. Summarizing i'd rather like food made by myself so i can say yes i'm traditionalist.

  7. I like sushi, generally I'm trying to eat sushi reguraly. I used to learn how to make sushi, I found that making rice is the most difficult part for me, that's why I quit and concentrate on consumption :)

    I can't imagine eating sushi with ketchup... I had no idea that anyone practice that. Bleh.

    I eat every kind of sushi, but I like salmon and tuna in both Maki and Nigiri.

    I lied, I hate Tamago.

  8. I've tried sushi only once, and I don't like it. So I will never try to do for my own :) I don't mind robots. They make sushi faster and easier, I have nothing against eating sushi made by them.

  9. I love sushi. One of my friends is a sushi master, so I had a course. ;o) I like soya sauce with sushi. Best sushi must be made by men (woman).

  10. 1. I love sushi!!! This is one of my favorite dishes.
    2. From time to time I make a sushi party, I invite few friends and we roll sushi talking and drinking plum wine. We always have grate time and everybody are enjoyed:)
    2. I like rolled maki with raw salmon, avocado and cucumber the most.
    3. I have never heard that sushi could be served with ketchup, bleee!!! disgusting!!
    4. It could be good investment for some sushi bar or good idea for running a catering business;)

  11. For me the half of the point of sushi, is making sushi :) especialy on the party, when people are makeing sushi together, it is great play :) a lot of fun and everyone can do sushi what he likes :)

    For me sushi is nothing special, I can eat it, but doesen't taste for me, maybe it depends, but for me in sushi must be a lot of meat, fish, and only a little rice :)

    4. i've never heard of sushi with ketchup. sounds disgusting.. ;)
    5. i don't think i would be able to find a difference, so why not?

    in general sushi is nice, but there are many better cuisines imo.
